Project-specific custom fields

As a freelancer that works on different types of projects, some tasks need different statuses and custom fields that aren't relevant to my other projects. It would be awesome if each project could have its own specific set of custom fields, statuses, etc.
In my mind, there are a couple of possible solutions:
1) You can set specific custom fields/statuses on a project-by-project basis. This wouldn't give you the flexibility to have different task types within projects, but each project would have a unique set of fields relevant to the tasks within that project.
2) Similar to ClickUp, you could have "projects" then "lists" inside of them. Each list could have a unique set of fields/statuses but, one more lists would roll up to the "project." I imagine this would be a far more significant investment/buildout, though.

I was going to create a suggestion called "Project Categories with Conditional Logic" but upvoting this instead as it sounds like the closest to what I'm thinking. The lack of project categories is a big deal. I've created custom fields to get around this, but I'd like this to be built into the project list view so I can see/filter by project category at a glance. Ideally we'd see another tab under Project Settings like Stages, but instead it's "Categories."
I'd like to see conditional logic tied to these categories, which is what I think Garrett is suggesting here. A primary use case for me is that clients on my web hosting plan receive a discounted hourly rate. If I set a project to category "Web (Hosted)" I'd like that to automatically apply a specific hourly rate to only that project.
