When using Search (Cmd-K) the previous search term is still present, which is unexpected, so when I type my new search term, it's appended to the previous search term, rendering the new search useless. It would be great if the search box was empty each time I press Cmd-K

Leaving the search text in there was intentional. If you are looking for something in particular and there are a few search results, you might click one, realize it wasn't correct and then immediately Cmd+K to go back in. In that scenario, you would want the search string and results there so you can select the next option.
I have a good middle ground solution though. When the search modal opens again, the search text will be selected, allowing you to just start typing if you want to change the search criteria... Basically giving you what you want while maintaining our current functionality.
